Ingredients

  • 2 Ciabatta sandwich rolls
  • 1/2 cup hummus (check out my Roasted Red Pepper Hummus recipe!)
  • 8 pieces sliced deli ham
  • Two handfuls baby spinach
  • 6 baby bella mushrooms
  • 1/2 sweet onion
  • 4 cheese slices of your choice (I used white cheddar!)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Frank’s hot sauce
  • 2 tsp thyme
  • Black pepper

Instructions

  • Set oven to Broil
  • Slice the ciabatta rolls in half with a serrated knife. Distribute and spread hummus evenly over each half
  • Top each roll with 2 pieces of deli ham
  • Dice baby bellas and onions, then toss in saucepan with spinach, Worcestershire sauce, and hot sauce
  • Cover and cook for five minutes
  • Uncover, add spices, stir, and recover for another five minutes
  • Split veggie topping between rolls
  • Top each sandwich with 2 slices of cheese
  • Broil on an oven-safe dish for 5-7 minutes
  • Goes great with a creamy, veggie soup!
